Jane McQ's top summer whites in the paper this morning. In a Bubbly "masterclass" she recommends keeping NV Cava & others for 12-18 months to allow them to gain flavour and depth. New to me. Any thoughts people? |

Yep, it's been standard practice at Maison Duncan with the better quality chardonnay sparklers for many years now. Take Pelorus for instance, wonderful at four years in. You need to know your vintages a little bit though Sparkling wines and many reasonable Cava wines have improved in recent years, and benefit from such a laying down period. Some simple & very cheap Pareleda versions don't improve..well..use not too, at any rate. The old wine books saying DYA are not up to date with wine making techniques, and changes to fullness in style for recent years. Talking DYA generally, I've been advocating integration time for MSB here for two years, and you guys have been agreeing 6 months later. |

Been doing so for years here at Pontac Towers. Without a doubt. Champagne too. Keep 3 years and you'll see -- there's a noticeable difference even after just 6 months |
