06/10/11 90% Sangiovese (Prugnolo Gentile), 5% Colorino and 5% Mammolo from the 93ha Fattoria del Cerro, the largest private estate producing Vino Nobile. Vines are 10 - 30 years old, planted at 3,300 - 5,000vines/ha and were harvested by hand with a yield of 50hl/ha. The grapes were fermented at 24 - 26°C in stainless steel tanks with aeration and pumping over. 30% of the final blend spent 12 months in French oak barriques and 6 months in Slavonian oak casks; 70% spent 18 months in Slavonian oak. Winemaker Riccardo Cotarella. Suitable for vegetarians and vegans. Alc 13.0%, TA 5.8g/l, pH 3.52, RS 1.1g/l.
