Winemaker: Mark Zeppel, Zilzie. Grape Varieties:. 85% Cabernet Sauvignon and 15% Merlot. Region: South Eastern Australia - Sourced predominately from our own vineyards and long term contracted growers in the Swan Hill and Murray Darling regions of north west Victoria. Viticulture/Vinification: Selected parcels of Cabernet Sauvignon Merlot grapes were fermented on skins in static and rotary fermenters with a neutral yeast strain to maximise primary fruit characters. After primary fermentation the wines were soft pressed and underwent malolactic fermentation before being aged in American and French oak for six months before being blended. Availability: Now – all stores. 14% vol. What a beautiful label. Taupe background and with a nicely drawn sheep, looking a bit lost. Dark, spicy Cabernet nose. Pretty sweet and fiery. I’m not sure when I’d drink this. There’s a tropical fruit after taste and I can’t see how I could eat savoury food with it. 23/03/10 |
