100% Maipo Cabernet Sauvignon is equivalent to Valdivieso's Reserve quality, selected by us in conjunction with resident 6th-year New Zealand winemaker Brett Jackson. Destemmed, cold-soaked, fermentation in stainless with thrice-daily pumpovers before 7-14 day post-ferment maceration prior to press. Aged 12 months in barrel, 30% American, 70% French. A baked style of Cabernet. There’s nothing green about this. Warm baked fruit with a nice feel. Ripe. Alc 13.5%, TA 5.53g/l, pH 3.41. Available from Wine Direct and 165 branches. 15/10/2008 |
