The grapes for this wine were harvested in the cool night temperatures to protect the juice from over extraction and oxidation. Crushing occurred within 2 hours of harvest, and the juice was immediately cooled to 8ºC. The juice was allowed to settle for 4 days to clarify it. A cultured yeast especially chosen for Chardonnay to enhance the melon and pineapple characters, was added to the clear juice, and fermentation proceeded at about 15ºC until almost dry. After chilling, the wine was allowed to settle, and the clear wine was filtered off the lees once the wine was cold stabilised.

Sweet, confected, oily and just the sort of wine that people who don’t like chardonnay, don’t like. There is some acidity, but the sweetness renders it completely unable to refresh.
