Made for M&S by Gaetane Carron from 90% Nero d’Avola 10% Sangiovese. Vertical trellis system. Hand-harvested at the end of September. Ten day fermentation at 28°C with daily pumping over and gently pressing to control extraction. – 350 stores. Minty, with some violet. Young and fresh with violet aftertaste. 19/09/08 13% |
