Made for M&S by Patrick Azcue, Plaimont from 65% Gros Manseng, 20% Petit Courbu and 15% Arrufiac. Manual picking at dawn to maximise freshness. The varieties are vinified separately, and a selection of the first press juices is made, followed by fermentation at controlled temperatures for ten days. After decanting and racking, the wine is aged on its lees for four months and is unoaked – 300 stores. Although unoaked, this smells a little of vanilla. Alive and fresh – good dinner party wine. Strong flavour but wouldn’t fight with the food. 13% 19/09/08 |
